Chocolate Orange Banana Bread


Serves: 12 slices

Preparation time: 15 mins

Cooking time: 25 mins

INGREDIENTS

100g dark chocolate chips

Zest of 1 orange

Juice of 1 orange

1 tspn GF bicarbonate of soda

1 tspn GF baking soda

1 cup coconut flour

1/2 cup almond flour

1 tspn vanilla extract

4 mashed bananas

1 tspn cinnamon

Pinch of maldon salt

75g cacao powder

4 beaten eggs

75g blended medjool dates

5 tbspns melted extra virgin coconut oil

 

INSTRUCTIONS

(1.) Preheat oven to 180 degrees Celsius

(2.) Line a shallow bread tin with baking paper or coat in coconut oil to prevent sticking

(3.) Mix together the dry ingredients in one bowl, and the wet ingredients in another

(4.) Slowly mix the wet ingredients into the dry ingredients bowl, adding a small amount of wet ingredients at a time

(5.) Once all the ingredients are mixed, pour the mixture into the bread tin

(6.) Cook for around 20-25 minutes until the bread is springy if you push it in the middle

N.B. If the bread is cooked well on top, but not in the middle, use a sheet of foil to cover the top of the bread, and continue cooking at 160 degree Celsius

(7.) Cut into 12 slices and serve warm for a 'melt in the mouth' effect

(8.) Enjoy!
